The popularity of breakfast foods is a good reason to have reliable entrees like eggs, bread, and other staples. But why do we think of it only as breakfast food? Scheduling breakfast for dinner is a great way to serve an easy and satisfying dinner without spending a lot of time in the kitchen.
Strata is an easy-to-prepare dish that can easily go from breakfast to dinner. The word strata means layer, and the Tomato Strata Florentine layer is simply diced bread, shredded spinach, and seasoned tomato wedges. Cream welded with egg milk poured on top binds the thin layers together and makes the bread swell when baked.
For individual or family dinners that eat at different times, bake the ingredients in separate cream cups that you can refrigerate and reheat in the microwave. For a family meal, use a baking sheet. Either way, you can prepare the evening coating before you plan to serve it. Leave a note for the first one in the house to put in the oven.
This inexpensive combination is rich in nutrients. In addition to cheese and milk, eggs provide about 1/3 of your daily protein requirement, while bread and tomatoes provide carbohydrates. Together, these ingredients create an impressive array of essential vitamins and minerals with under 200 calories and only 8 grams of fat per serving.
Other breakfast dishes also make good dinners. Scrambled eggs for quick cooking are easy to serve with pasta or rice and onions, peppers, mushrooms or other flavored foods. Hard-boiled eggs go well with bread, vegetables and cheese.
Florentinski tomato layer
4 servings
cooking spray
2 cups chopped fresh spinach (about 4 ounces)
2 slices whole wheat bread, diced (about 1 1/2 cups)
1 cup chopped fresh tomatoes (about 1 medium)
1 teaspoon Italian seasoning, crushed
4 eggs
1 cup skim or low-fat milk (1%)
1/4 cup (1 ounce) grated low-water mozzarella cheese, partially skimmed
For Individual Cups: Distribute 4 (10 ounce) cups of heavy cream evenly with the spray. Add 1/2 cup of spinach to each cup. Sprinkle each with about 1/3 cup bread cubes. In a medium bowl, mix the tomatoes and spices until the tomatoes are evenly coated in the spices. Pour 1/4 cup of the tomato mixture over the bread cubes in each cup. In a medium bowl, beat the eggs and milk. Slowly pour 1/2 cup egg mixture over tomato mixture in each cup. Sprinkle each with 1 tbsp cheese.
Bake in a preheated 350 degree F oven until cream swells and begins to pull away from the walls of the cup and a knife placed near the center comes out clean, about 30 minutes.
For the pan: Coat all ingredients as above into a sprayed 8 x 8 x 2 inch baking dish. Bake as above.
